ALMOND COCONUT FAT BOMBS
Makes 15 bombs
The flavor of these Keto fat bombs will certainly satisfy your craving for chocolate. Sweeten them up with coconut sugar if you like. Perfect for a daytime pick-me-up or dessert, you’ll always come back to this recipe.
INGREDIENTS
1½ cups almonds, coarsely ground
½ cup unsweetened shredded coconut
¼ cup coconut butter
2 tablespoons unsweetened almond or peanut butter, plus more as needed
2 tablespoons chia seeds
2 tablespoons flax meal
2 tablespoons hemp seeds
1 teaspoon cinnamon
1 teaspoon vanilla extract
¼ teaspoon salt
2 tablespoons cacao nibs
INSTRUCTIONS
1. Combine all ingredients except cacao nibs in a food processor. Pulse for 2 minutes, until the mixture has begun to stick together. You want the seeds and the nut butter to begin to emulsify, so if your mixture is too powdery, add more nut butter to make it hold together better.
2. Add your cacao nibs and pulse just to combine, leaving larger bits of cacao in the mix.
3. Scoop out tablespoon-size portions and roll into balls. If desired, you can roll each ball in dark cocoa powder before chilling. Place balls on a plate and chill in the refrigerator for at least 8 hours. Store for up to 2 weeks.
